100g unsalted butter, melted
200g white breadcrumbs
100g light muscovado sugar
juice and finely grated zest of 1 orange
0.5tsp ground cinnamon
freshly grated nutmeg
650g cooking apples, peel, cored and sliced
Pre-heat oven to 180°C/Gas 4. Butter a 1.5 litre capacity baking or soufflé dish. Mix the melted butter with the breadcrumbs. In a separate bowl, mix the sugar with the orange zest, cinnamon and nutmeg. Take a quarter of the breadcrumbs and sprinkle over the base of the buttered dish. Lay half the apple slices on top, sprinkle with a little orange juice then sprinkle with half the sugar mixture. Repeat these layers then finish off by sprinkling all the remaining breadcrumbs over the top. Finally pour the remaining orange juice over the top. Bake for 40-50 minutes, until the apples are tender. Serve hot or warm with cream or custard.
